In his hilly vineyards near the centuries-old Rosazzo Abbey, Paolo uses higher-density vine training than most of his neighbors (a vineyard technique that pushes grapes to develop extra flavor intensity). Beyond the mountain freshness naturally imparted to the wine by the Alpine terrain, Paolo also chose to cool-ferment it in stainless steel tanks. The Valle estate pioneered this practice in the region decades ago, to help preserve the refreshing, pure-fruited character of the wine. And in an exceptional year like 2016 – which Paolo called “another outstanding harvest” – his Pinot Grigio is stunning.

Expect world-class quality in the glass, including that level of complexity that you only get in the very best Italian Pinot Grigios. Enjoy delicate aromas of pear and peach, with a hint of almond. More orchard fruit unfolds on the palate, framed by well-balanced acidity and a crisp, refreshing texture.     This is the best wine I tasted in a while. Texture, composition and taste all three get five stars from me.
