Hervé singled out only his very oldest Grenache and Carignan vines (we’re talking 60 to 80 years of age) – so each hand-harvested grape is a tiny, highly concentrated knot of flavor. He then aged the wine for six months in fine oak barrels. The result is more of everything: extra layers of fruit flavor, heightened richness, and luxurious complexity.
