When it comes to pairing wine with your meal, there is not one perfect match – except for Champagne, because Champagne is ALWAYS the right answer! In my house, we usually serve a progression of wines throughout the meal which always starts with champagne or sparkling wine when the turkey comes out of the oven, followed by whites and/or rosés and then reds. But, I always choose wines that have a great backbone of acidity to cut through all the fatty goodness on the table, otherwise everything can end up feeling very heavy.”
